Possibly the most evil cookies I’ve ever baked.
Ingredients300g dark chocolate (about 55%) in small pieces |
Method
Preheat to 180 degrees C / Gas 4 / Fan oven 160 degrees C
Melt 100g of the dark chocolate
Add sugar, butter, peanut butter, egg and vanilla and mix well
Stir in the sifted flour, all of the milk chocolate and half of what’s left of the dark chocolate and the peanuts
The mixture will be quite soft
Drop big spoonfulls on to baking sheets – they’re going to spread while they cook so leave lots of space
Stick the remaining dark chocolate chunks on top of the cookies
Bake for 15-20 mins until tinged slightly darker on edges
Leave them alone while they cool as they do not hold their shape while they are warm but they will firm up as they cool.
Hints
The mistake I made was not cooking for long enough and then touching them too much as they cooled. Also, the original recipe’s cooking time was too short and also says to transfer to a wire rack but I don’t know how they got them off the baking tray before they cooled as the chocolate is just so melty. Perhaps breaking the chocolate into smaller pieces would have make it easier to get them off the baking trays to cool.
And if they fail, they’re awesome heated up over icecream :)
